The Clover Club gets an update here with tonic water plus we make a non-alcoholic version with Seedlip

An update on the Clover Club gin cocktail, with a no alcohol version made with Seedlip Garden

We created this cocktail set to mark our profile of Kerry aka @athomecocktails in our Connect the Gram series. In the interview, Kerry mentioned how her four year old son was constantly looking to emulate what drinks she had and would proudly announce to all and sundry how he loved Mummy's cocktails. 

Based loosely on the Clover Club classic recipe, the Clover Club is a delightful flavour combination of raspberries and gin - the frothy foam that's created by the use of egg white has been swapped out on this occasion as we wanted a more spritz like drink for summer. We've also eschewed the use of grenadine or raspberry syrup, instead using fresh raspberries sweetened with a homemade chamomile tea syrup to give it a bit of a punch and bolster the herbaceousness of the gin. 

For the non-alcoholic version, we've used the new Seedlip Garden in place of the gin, which is in essence a non alcoholic spirit that has its closest flavour profile to a gin (minus the alcoholic kick).

Ingredients

  • 4 raspberries

  • 10ml chamomile tea syrup*

  • 45 ml gin (We used West Winds Cutlass) or Seedlip Garden (for the non alcoholic version)

  • 10 ml lemon juice

Muddle raspberries in the base of the shaker with the chamomile tea syrup. Add gin (or Seedlip) and lemon juice and shake over ice. Strain into a chilled coupe glass and top up with approximately 10ml soda.

Serve with a trio of raspberries.
